Scrambled tofu as an morning starter! A different way of your good morning breakfasts. Many vegans use tofu as a meat substitute. Tofu is a plant-based protein food made from soybeans. The beans are soaked, cooked and crushed into a liquid. With the help of a coagulant, the liquid thickens to become tofu. It’s low-carb, dairy-free, gluten-free, cholesterol-free. Tofu is extremely versatile. It doesn’t have a lot of flavor on its own; it takes on the flavor of whatever you cook it with.

 

Ingredients

1 vegetable broth
1 cup water
1/2 tsp dried basil
Spinach
1/4 tsp onion powder
1/4 tsp turmeric (turmeric is responsible for naturally dying the scramble to look like eggs, but it does bring a distinct flavor to the dish)

 

Instructions

1. In a bowl dissolve the broth in water

2. Heat oil in a pan medium high. Add the tofu and mash it into small curds.

3. Add the turmeric, basil, onion powder (or the add on you favorites) and continue to cook. Poor 3 to 4 tbsp broth over the tofu. Stir frequently until the tofu is completely yellow (from the turmeric) and the broth is devolved. Serve on what ever you like. I did bread ? and enjoy
